Vegetable toast

What do you need?

  • Four slices of bread – makes 16 pieces (4 out of 1 slice of bread)
  • Four medium boiled potatoes
  • One cup chopped vegetables like onion, capsicum, broccoli, tomatoes etc.
  • ½ tsp red chilli powder
  • ½ tsp chaat masala
  • salt to taste
  • 2 tbsp finely chopped green chillies and ginger
  • 2 tbsp chopped coriander/cilantro leaves
  • Oil for shallow frying

How to prepare?

  • Mash the potatoes and add all the vegetables, spices, green chillies and coriander to the mashed potatoes. You can taste the mixture and adjust seasonings according to your taste.
  • Take a bread slice and cut it into the 4 square pieces out of 1 slice of bread.
  • Spread the mixture of mash potato evenly on both sides of the bread.
  • Start your stove and let the non-stick pan heat by greasing it lightly with oil.
  • Cook on both sides till it gives away the golden brown colour using a little oil. Repeat the same steps with all the remaining slices of bread.
  • Serve with ketchup.

Bread pancakes

What do you need?

  • Ten bread slices
  • ½-1 cup milk as required
  • Two onions grated or chopped very fine
  • One capsicum diced
  • Two tomatoes chopped without pulp
  • 1 tbsp chopped green chillies
  • 1 tbsp grated ginger
  • 2 tbsp cilantro or coriander leaves
  • One potato medium size, peeled and grated
  • salt to taste
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • Oil for shallow frying

How to prepare?

  • Cut the corners of the bread slices.
  • Crush the bread slices and soak them in one-fourth or half cup milk for 10 minutes.
  • Now add all the described ingredients to the soaked bread except milk and oil and mix well.
  • Prepare a thick batter using milk.
  • The batter must be sticky but do not dilute it as the diluted batter will be too soft to retain shape.
  • Heat a non-stick pan and grease it with oil or butter.
  • Spread batter on the pan and give it a shape you desire with the help of a spoon.
  • Spread a little oil around pancake to keep it away from sticking to the pan.
  • Cook it on slow flame till the base is golden brown coloured.
  • Turn it over and cook the other side in the same manner.
  • Add it to your kid’s lunch box.

Bread cup pizzas

What do you need?

  • Six bread slices
  • 2 tsp butter
  • 1 cup chopped vegetables of your choice like onions, capsicum, tomato, baby corn, red peppers
  • 1 tbsp tomato ketchup
  • 3 tbsp mozzarella or ordinary cheese
  • Salt, black pepper, and oregano to taste

How to prepare?

  • Cut the bread into circles using some round utensil or lid.
  • Flatten the bread using a rolling apparatus.
  • Apply butter on both the sides of the bread and fit in the muffin tray.
  • Add salt, pepper, and oregano to the cut vegetables according to your taste.
  • Add the mixture into the bread cups.
  • Cover the cups with cheese and dot with butter.
  • Put the bread cups in a preheated oven for 15 minutes at 180 C and bake it until bread turns golden brown.

What do you need?

  • Ten bread slices
  • Four medium-sized boiled potatoes
  • 1 tsp minced green chillies
  • 1 tsp grated ginger
  • 2 tbsp oil
  • ½ tsp fennel seeds
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • ½ tsp raw mango powder or chaat masala
  • salt to taste
  • ½ cup chopped nuts (cashew nuts, raisins)
  • Coriander leaves to garnish

How to prepare?

  • Dice the boiled potatoes.
  • Heat the oil and add fennel seeds when they start making a crackling sound add green chillies and ginger.
  • Add potatoes, nuts and all the spices and let it cook for 2 minutes.
  • Turn off the heat of the stove and add fresh coriander leaves.
  • Give time to cool the mixture before filling in the bread rolls.
  • Soak the bread slices in a bowl of water for 30 seconds.
  • Take out extra water by pressing slice in your palms.
  • Add a spoon of potato mixture on the bread slice.
  • Shape the slice into a roll with your hands.
  • Heat the oil and deep fry the rolls on medium flame till it gets golden brown colour.
  • Put it in a tiffin with sauce or mint chutney.

Hung curd sandwich

What do you need?

  • Eight slices of bread
  • ¾ cup hung Curd (from 1 1/2 cup curd)
  • One onion chopped
  • One tomato chopped (remove seeds before chopping)
  • ½ capsicum chopped
  • ½ Carrot grated
  • One green chilly chopped
  • 1 tbsp finely chopped fresh coriander leaves
  • salt to taste
  • 1/8 tsp red chilly powder
  • 1/8 tsp chaat masala
  • ¼ tsp oregano (optional)
  • Olive Oil/butter/ghee to grease the bread lightly

How to prepare?

  • To prepare hung curd, add one cup of regular curd in a muslin or cotton cloth in a strainer.
  • Keep a bowl below filter to collect the liquid.
  • Keep the curd with the filter in the fridge for 3-4 hours to separate all liquid components from the curd.
  • You will get a thick cheese-like curd called hung curd.
  • Keep it in the fridge to make sure that the curd does not get sour.
  • Put the chopped vegetables in a wide pan.
  • Add hung curd to it.
  • Prepare a mixture by adding all the spices and salt.
  • Apply butter or ghee on one side of the bread slices lightly, then spread a thick layer of hung curd mixture on bread.
  • Grill or toast the bread in a sandwich maker or pan.
  • Serve with green chutney or tomato ketchup.

Poha Tikki

What do you need?

  • 1 ½ cup leftover Poha
  • Two boiled Potatoes
  • One onion finely chopped
  • 1 tsp chopped green chillies
  • 1 tsp grated ginger
  • ¼ tsp chaat masala
  • salt to taste
  • 1 tsp chopped coriander leaves
  • 1-2 tbsp oil

How to prepare?

  • Grind poha in your blender until you get a crumbled form.
  • Add all the remaining ingredients except for oil to the ground poha.
  • Mix it properly and check the spices. If your children like spicy food, then add red chilli powder also.
  • Prepare Tikki from the mixture.
  • Cook the poha Tikki in oil on medium or low flame starting with the high flame.
  • Cook it until both sides have a light brown colour.
  • Your poha Tikki is ready to serve with coriander chutney or ketchup.

Moong daal dhokla

Soaking time: 3-4 hours

Cooking time: 12-15 minutes

What do you need?

  • 1 cup washed moong dal
  • 1-2 green chillies
  • 1 tsp ginger
  • 1 tsp sugar
  • ¼ tsp turmeric powder
  • A pinch asafoetida/heeng
  • ¼ tsp red chilli powder
  • Salt to taste
  • 1 tsp oil
  • 1tsp Eno fruit salt

For tempering:

  • 1 tbsp oil
  • A pinch asafetida
  • 1 tsp rai/mustard seeds
  • 1 tsp til/sesame seeds
  • Two green chillies cut lengthwise
  • Chopped coriander leaves to garnish
  • Give them to your kid in lunch box

How to prepare?

  • Wash moong dal and soak it for at least 3-4 hours.
  • Blend it with the help of a blender and include green chillies and ginger.
  • Add sugar, turmeric, asafetida, red chilli powder, salt and oil to the batter and mix everything properly.
  • Get the steamer ready and apply oil on the pan in which you are going to steam the dhokla.
  • When the steamer is hot and ready, add baking soda to the batter and mix it nicely and immediately shift to the greased pan.
  • Steam the batter for 12-15 minutes and let it rest for 2-3 minutes in the steamer and then take out.
  • To prepare the tempering, heat 1 tbsp of oil in a kadhai.
  • When the oil is hot add mustard seeds and sesame seeds and cook for 2 minutes.
  • When they start producing crackling sound add green chillies and asafetida and cook for another minute.
  • Turn off the flame and pour the tempering on prepared dhokla.
  • Cut it into pieces and serve with green chutney.
